Ottolenghi - Pomegranate, Rose and Preserved Lemon Harissa (170g)

Harissa is North African in origin, but this version takes it somewhere of its own. Rose petals bring a floral softness, preserved lemon cuts through with brightness, and pomegranate adds a sweet, fruity depth that lingers after the heat fades. It's complex in the best way - warming without being aggressive, and fragrant enough to do real work with very little effort. Stir through roasted carrots, spoon over lamb, or swirl into yoghurt for an instant sauce with something to say.
